This exquisite blend offers a rich and layered flavour: At first bite, the floral aroma of Organic Munzur Mountain Honey envelops the palate with its fluid consistency, followed by the earthy, slightly toasted and dense texture of Organic Tahini. The deep, nutty aroma of sesame seeds balances the flavour and sits on top of the sweetness. Finally, the creamy texture and slightly buttery flavour of organic ghee expertly ties all the flavours together. Each bite provides both a nostalgic sense of old-fashioned culinary traditions and a satisfying indulgence reminiscent of a tempting dessert.

Organic Tahini

The flavour of tahini has a character that lingers on the palate, revealing a little more with each bite. Combined with honey and ghee, the flavours of its natural oil become more pronounced and the result is a soft, warm, nutritious explosion of flavour. Tahini has a slightly toasted and earthy flavour as the sesame seeds are crushed to a dense consistency. This natural, slightly sooty flavour is particularly pronounced in the high quality tahini used in Sahighee. The natural oils in the sesame give tahini a velvety and creamy texture.

Tahini, one of the oldest flavours in our geography, is a storehouse of B1, which plays an important role in the functioning of the nervous system in the body. Tahini is also rich in phosphorus, zinc, iron and magnesium and is a moderate source of calcium, other B vitamins and potassium. Sahighee’s Tahini contains high quality local sesame seeds.

Organic Ghee (clarified butter)

Ghee is made by distilling pure butter over a low heat for long hours. It has a more intense milky-creamy flavour than butter. Because it is purified, it does not contain the lactose found in regular butter, which makes it smoother on the palate. It also has a natural nutty and caramelised undertone to its flavour, as the milk is separated and slightly browned during the production process. A very healthy and high quality source of saturated fat, ghee balances stomach acid secretion and supports the healthy functioning of the digestive system. The organic ghee we use in Sahighee is carefully produced.

Organic Munzur Mountain Honey

Organic Munzur Mountain Honey is one of nature’s purest and most potent flavours. Derived from the rich floral flora of the Munzur Mountains, this honey offers a deep flavour. The intense floral notes from the wild flowers of Munzur’s high plateaus give it a fresh and springy taste, especially the extracts of aromatic herbs such as lavender, geven and mountain thyme. It can be sweet at first, then slightly sour and even slightly astringent.

Thanks to its natural minerals and pollen, it offers a rich and complex taste experience rather than a simple sugary taste. Due to the special flora of the region, Organic Munzur Mountain Honey can have a slightly woody, smoky and even very subtle spicy flavour. This is mainly due to the nectar of plants such as thyme and geven.

Honey, which is a powerful antioxidant, supports the full capacity of mental functions and memory thanks to the antioxidant called pinocembrin in its content. In honey, which is a source of protein, proline has a very important place, which shows the purity and quality of honey among the 20 amino acids that make up protein. The proline value of the Organic Munzur Mountain Honey we use for Sahighee was tested in September 2022: 1323.
